Hosting a Super Bowl Party is a lot like hosting Thanksgiving.

Family and friends gather around to eat vast quantities of food. Then they watch football.

But UNLIKE Thanksgiving, a Super Bowl party is ripe for fun and exciting recipes, new ideas, improvisation, and tiny squishy football decorations.

This year, in honor of my husband and his staunch sweet tooth, I am making an Ice Cream Sandwich Bar the centerpiece of my Super Bowl bash. I’ll also share my ideas for snacks, decorations, and more!

The Easiest M&M Cookies

Nothing kills the fun like having to bust out your mixer to make a batch of cookies.

I found a really great recipe in my America’s Test Kitchen cookbook which I adapted for M&M Cookies. Leave your mixer in the cupboard! The recipe uses just one bowl and melted butter and it makes cookie-making a breeze.

These cookies are epic. I’ll be adapting this recipe for the rest of my cookie-baking life, I think.

You can set a tray of cookies out on the table along with a few flavors of ice cream. If you’re going to keep the ice cream out for a long period of time, be sure to keep it on ice! Obviously.

Don’t forget fun & fancy toppings!

Snack Time

I like to serve other snacks that can be served chilled or at room temperature to compliment the cookie ice cream sandwiches. I decided on Mexican Tortilla Pinwheels and an easy homemade cereal mix.

Ingredients:

  • 1 cup (packed) brown sugar
  • 1/2 cup sugar
  • 10 Tablespoons butter, melted and cooled
  • 2 eggs
  • 1 Tablespoon vanilla
  • 2 cups flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup M&Ms candies
  • Ice cream, for serving
  • Candies or sprinkles, for serving

Directions:

Adjust oven racks to the upper-middle and lower-middle positions. Preheat oven to 350°F. Line 2 baking sheets with parchment paper or a silicone mat.

In a large bowl, whisk together brown sugar and white sugar. Whisk in melted butter until smooth. Add eggs and vanilla, whisking until smooth.

Add flour, baking soda, and salt. Using a rubber spatula, carefully fold in. Stir in M&Ms.

Drop 2 Tablespoons of cookie dough 2 inches apart on the prepared baking sheets. Bake about 15 minutes, rotating the baking sheets and switching their positions halfway through. The cookies should be set but still soft with light golden edges.

To make an ice cream sandwich, place ice cream between two cookies. Roll edges in candies if desired.
