Lunch For A Chilly Afternoon. Spice Rubbed Game Hen With A Walnut Pomegranate Sauce Recipe
Ingredients
- I have a basic rub that I like to use when grilling quail and it works well with other poultry too. It's pretty easy. Mix together:
- 1/2 tsp of allspice
- 1/2 tsp of cayenne (I usually use Kashmiri chili)
- 1/4 tsp of salt
- ground black pepper
- 1 tsp of Tropical Traditions Organic Raw Honey

%20but%20that's%20because%20it's%20getting%20ready%20to%20rain.%20It's%20the%20kind%20of%20weather%20that's%20great%20for%20writers.%20Nothing%20to%20distract.%20The%20prospect%20of%20going%20out%20is%20actually%20more%20work%20than%20staying%20in%20and%20well...%20just%20working.%20But%20that's%20no%20excuse%20for%20a%20dull%20lunch.%20Our%20main%20meal%20of%20the%20day%20(on%20weekdays)%20is%20lunch.%20Weekends%20is%20for%20parties%20and%20dinners,%20a%20whole%20other%20matter.%20Weekdays,%20sanity%20reigns%20and%20we%20eat%20like%20Europeans:%20Big%20midday%20meal,%20an%20apple%20and%20cheese%20in%20the%20evening.%20Most%20of%20the%20time%20I%20cook%20Indian%20food%20but%20I%20also%20like%20to%20mix%20it%20up,%20especially%20when%20I%20can%20get%20my%20hands%20on%20something%20fresh%20that%20I%20usually%20see%20frozen.%20Today%20it%20was%20Game%20Hens.%3C/p%3E%3Cp%3EI%20love%20those%20little%20birds,%20but%20most%20of%20the%20time%20they%20are%20frozen%20icy%20little%20poultry%20spheres%20and%20somehow%20I'm%20always%20suspicious.%20Yesterday%20however,%20I%20found%20some%20fresh%20at%20Sonoma%20Market,%20so%20of%20course%20I%20had%20to%20buy%20one.%20They%20make%20a%20great%20entree.%20One%20bird%20halved,%20rubbed%20and%20either%20grilled%20or%20pan%20roasted%20makes%20a%20nice%20filling%20entree.%3C/p%3E%3Cp%3EPreparing%20the%20rub:%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20450%20degrees.%3C/p%3E%3Cp%3ESpice%20Rubbed%20Game%20Hen%3C/p%3E%3Cp%3EPreparing%20the%20birds:%3C/p%3E%3Cp%3ERinse%20them%20thoroughly%20in%20cold%20water%20and%20dry%20them.%3C/p%3E%3Cp%3ESplit%20the%20game%20hen%20in%20half%20through%20the%20breast%20and%20then%20remove%20the%20back%20bone.%3C/p%3E%3Cp%3ERub%20the%20spice%20mix%20over%20the%20birds.%3C/p%3E%3Cp%3EDrizzle%20the%20birds%20with%20a%20bit%20of%20olive%20oil.%20Then%20pop%20them%20into%20the%20oven%20and%20immediately%20drop%20the%20heat%20to%20350%20degrees.%20Roast%20them%20for%20about%2040%20to%2045%20minutes.%3C/p%3E%3Cp%3EWhile%20the%20birds%20were%20roasting%20I%20decided%20to%20make%20a%20sauce.%20I'd%20been%20thinking%20about%20walnuts%20a%20lot%20and%20ever%20since%20I%20participated%20in%20the%20POMwonderful%20dinner,%20I've%20been%20making%20my%20own%20pomegranate%20molasses.%20Walnut%20and%20pomegranate%20trees%20are%20pretty%20common%20around%20here%20in%20Sonoma,%20and%20this%20is%20walnut%20season%20and%20the%20tail-end%20of%20pomegranate%20season,%20so%20it%20seemed%20like%20the%20perfect%20time%20to%20take%20advantage%20of%20these%20wonderful%20seasonal%20treats.%3C/p%3E%3Cp%3EI%20knew%20I%20had%20to%20use%20them%20in%20some%20kind%20of%20sauce.%20When%20I%20grill%20quail,%20I%20usually%20serve%20them%20with%20a%20molasses%20spice%20reduction.%20I%20thought%20hmmmmm,%20why%20can't%20I%20try%20this%20with%20my%20pomegranate%20molasses%20and%20while%20I'm%20at%20it,%20why%20can't%20I%20work%20walnuts%20into%20this%20thing%20in%20some%20way?%20%20So%20I%20did.%3C/p%3E%3Cp%3EPreparing%20the%20sauce:%3C/p%3E%3Cp%3EIn%20a%20small%20cast%20iron%20skillet%20I%20toasted%20about%201%20cup%20of%20walnuts.%3C/p%3E%3Cp%3EWhen%20they're%20nice%20and%20toasty,%20grind%20them%20into%20a%20fine%20paste.%3C/p%3E%3Cp%3EIn%20a%20small%20pan%20mix%20the%20ground%20toasted%20walnuts%20with%20about%201/2%20cup%20of%20water.%3C/p%3E%3Cp%3EMix%20it%20well%20and%20bring%20it%20to%20a%20boil,%20then%20reduce%20the%20heat%20and%20keep%20the%20walnut%20mixture%20to%20a%20simmer.%20It%20will%20thicken%20as%20it%20cooks.%3C/p%3E%3Cp%3EWhen%20the%20walnut%20mixture%20starts%20to%20thicken%20a%20bit%20add%20in:%3C/p%3E%3Cp%3E3%20Tbs%20of%20pomegranate%20molasses.%3C/p%3E%3Cp%3EStir%20the%20sauce%20a%20bit.%20Then%20add%20in:%3C/p%3E%3Cp%3E1%20tsp%20of%20Tropical%20Traditions%20Organic%20Raw%20Honey%3C/p%3E%3Cp%3EAnd%20a%20pinch%20of%20cinnamon.%3C/p%3E%3Cp%3ESalt%20to%20taste%20and%20add%20a%20turn%20of%20ground%20black%20pepper.%20Continue%20to%20let%20the%20sauce%20thicken%20and%20reduce.%3C/p%3E%3Cp%3EAlways%20taste%20for%20flavor%20as%20you%20go.%3C/p%3E%3Cp%3EI%20added%20a%20handful%20of%20fresh%20pomegranate%20arils.%3C/p%3E%3Cp%3EI%20also%20added%20a%20dab%20of%20butter%20(a%20very%20tiny%20piece)%20to%20help%20with%20the%20glaze%20and%20smooth%20the%20sauce,%20and%20when%20the%20game%20hens%20were%20ready%20I%20put%201%20tsp%20of%20pan%20drippings%20into%20the%20sauce.%20I%20drizzled%20the%20sauce%20over%20the%20game%20hen%20halves%20and%20then%20scattered%20a%20few%20more%20arils.%3C/p%3E%3Cp%3EThe%20sauce%20worked.%20Grinding%20the%20nuts%20gave%20the%20sauce%20a%20thick,%20mole-like%20texture.%20The%20combination%20of%20the%20toasted%20earthiness%20of%20the%20walnuts,%20the%20sweet%20tang%20of%20pomegranate%20molasses%20and%20the%20undertone%20of%20cinnamon%20and%20honey%20all%20played%20together%20to%20accent%20the%20spicy%20kick%20of%20the%20game%20hen%20rub.%3C/p%3E%3Cp%3EIt%20was%20served%20with%20shredded%20red%20cabbage%20(those%20little%20bags%20again)%20cooked%20in%20a%20bit%20of%20apple%20juice%20and%20apple%20cider,%20and%20some%20lightly%20steamed%20baby%20potatoes.%20For%20something%20that%20just%20occurred%20to%20me%20as%20I%20was%20staring%20at%20that%20little%20bird%20and%20wondering%20what%20I%20could%20do%20with%20it,%20it%20was%20a%20really%20great%20lunch,%20and%20it's%20a%20good%20reason%20to%20keep%20walnuts%20and%20pomegranates%20around%20the%20house%20when%20they're%20so%20abundant,%20as%20they%20are%20here.%3C/p%3E%3Cp%3EMeanwhile,%20I'm%20working%20on%20a%20special%20dessert.%20I've%20made%20two%20versions%20of%20it%20so%20far%20and%20I'm%20not%20quite%20pleased%20with%20it%20yet%20so%20I've%20been%20eating%20my%20mistakes.%20I'm%20hoping%20to%20have%20it%20perfected%20soon.%20So%20is%20my%20butt.%3C/p%3E){kind=link}
