Directions

  1. 1. Bring the water to a boil in a heavy saucepan; add in the salt and stir in the rice with a fork. Cover and simmer over the lowest possible heat, stirring now and then, till the rice is very tender, about 35 min.
  2. 2. Add in the lowfat milk, optional raisins, sugar and optional cinnamon and simmer, uncovered, stirring frequently, till most of the lowfat milk is absorbed, usually about 20 min.
  3. 3. Remove from the heat, and stir in the vanilla. Serve with or possibly without cream poured over the top.
