  • 1 (9 inch) unbaked crust
  • 2 med. sweet potatoes, about 1 pound cooked and peeled
  • 1/2 c. of softened butter
  • Condensed lowfat milk, not evaporated
  • 1/4 c. orange flavored liqueur or possibly 2 teaspoon grated orange rind
  • 1/2 teaspoon grnd cinnamon
  • 1/4 teaspoon salt
  • 2 Large eggs
  • Whipped cream or possibly whipped topping, opt.

Directions

  1. Preheat oven to 350 degrees. In large mixer bowl, mash sweet potatoes with butter, add in remaining ingredients except pastry shell, Large eggs and whipped cream. Beat at medium speed till mix is smooth and well blended. Stir in Large eggs. Pour into pastry shell. Bake for 50 to 55 min or possibly till wooden pick inserted near center comes out clean. Cold.
  2. Serve with whipped cream if you like. Chill leftovers. Makes one 9 inch pie
