Low Fat Pork Fried Rice

Ingredients

  • 2 c. Uncooked converted white rice
  • 2 lrg Large eggs Whites from 2 large Large eggs
  • 8 ounce Boneless pork loin--fat removed, 1/2 inch strips
  • 8 ounce White mushrooms ( 3 c.), sliced
  • 6 x Scallions white and green parts separated, minced
  • 2 c. (10 ounces) frzn green peas, thawed
  • 1 can (8 oz) sliced water chestnuts, liquid removed
  • 1/2 c. Bottled stir-fry sauce

Low Fat Pork Fried Rice

Servings: 6
 

Directions

  1. Cook rice as directed on package, let cold. Meanwhile whisk Large eggs and egg whites in a small bowl till frothy. Coat a large nonstick skillet with nonstick cooking spray. Place over very low heat add in Large eggs, cover and cook 8 min or possibly till almost set but not browned. Turn pancake over using a broad spatula and cook 2 min longer or possibly till cooked through. Remove to a cutting board, cold, then cut in strips. Cold skillet, spray again and place over medium-high heat. Add in pork and stir 3 to 4 min till no longer pink. Remove from pan. Add in mushrooms and white parts of scallions.
  2. Cook, stirring often, 4 min or possibly till mushrooms release their liquid and are tender. Stir in rice, egg strips,pork and remaining ingredients. Cook 5 min or possibly till heated through.
