Ingredients
- 4 oz low fat Cream Cheese
- ½ C low fat Cottage Cheese
- ¼ C low fat Mayonnaise
- 4 oz jar Pimentos, drained
- 2 T grated Onion
- ¼ t Garlic Powder
- ¼ t Cayenne Pepper
- 2 C low fat shredded Sharp Cheddar Cheese

Low Fat Pimento Cheese
Time: 15 minutes prep
Servings: 3 cups
Directions
- Blend all but the last ingredient until well mixed. Stir in shredded cheese
- Yield: 3 cups Pimento Cheese

Summary
Pimento Cheese is one of my all time favorite Southern foods and I thought with a little tweaking it could be part of a healthy snack. Serve on some celery or with one of my other more healthy faves, boiled shrimp!
