Low Fat Pimento Cheese

Ingredients

  • 4 oz low fat Cream Cheese
  • ½ C low fat Cottage Cheese
  • ¼ C low fat Mayonnaise
  • 4 oz jar Pimentos, drained
  • 2 T grated Onion
  • ¼ t Garlic Powder
  • ¼ t Cayenne Pepper
  • 2 C low fat shredded Sharp Cheddar Cheese

Low Fat Pimento Cheese

Time: 15 minutes prep
Servings: 3 cups
 

Directions

  1. Blend all but the last ingredient until well mixed. Stir in shredded cheese
  2. Yield: 3 cups Pimento Cheese

Pimento Cheese is one of my all time favorite Southern foods and I thought with a little tweaking it could be part of a healthy snack. Serve on some celery or with one of my other more healthy faves, boiled shrimp!
