I found this recipe shared by a friend on facebook. They look yummy and I can't wait to try making them.

  • 1 Box lemon cake mix (any brand)
  • 1 egg slightly beaten
  • 2 cups cool whip thawed (8oz container)
  • 1/2 to 1c confectioners sugar

Directions

  1. Preheat oven to 350
  2. in a large bowl combine cake mix, egg and cool whip.
  3. Batter will be sticky
  4. Form dough into tablespoonfuls and roll in powdered sugar.
  5. Bake 8-10 minutes
  6. Allow to cool for 1 minute on baking sheet before moving.

    I tried these today and they turned out great and are delicious. When you said the dough would be sticky you were not exaggerating. I even mixed the cookie dough last night and put it in the frig when I saw how sticky the dough was. What did you do so that the dough would not stick to your hands and spoon? This is the part that frustrated me. I'm not sure I would want my grandkids to make these cookies because of this. I might try putting the dough in a 9 x 13 pan and make bars next time.
    I've cooked/tasted this recipe!

      Jeannette, I did not have the problem that you mentioned. Also have had many friends make these as well and have not hear they had issues. Maybe keep a glass of cold water handy and dip spoon in water when getting too sticky? We do that sometimes with butter cream icing when spreading on cake and it seems to help. Let us know how the bars turn out if you try them.
