Louisiana Spice Cake With Cinnamon Whipped Cream

Ingredients

  • 2 1/2 c. All-purpose flour
  • 1 1/2 c. Firmly packed brown sugar
  • 1/2 c. Sugar
  • 1 tsp Salt
  • 1 tsp Baking soda
  • 1/2 tsp Nutmeg
  • 1/2 tsp Allspice
  • 1 1/4 c. Buttermilk
  • 1 c. Shortening
  • 1 tsp Vanilla
  • 3 x Large eggs
  • 1 c. Minced black walnuts
  • 1 c. Whipping cream
  • 3 Tbsp. Sugar
  • 1/2 tsp Vanilla
  • 1/4 tsp Cinnamon

Directions

  1. Heat oven to 350F. Generously grease (not oil) bottom only of 13x9" pan. In a large bowl, blend all ingredients except black walnuts, at low speed till moistened. Beat 3 min at medium speed. Stir in walnuts. Pour batter into prepared pan. Bake at 350F for 45 min or possibly till toothpick inserted in center comes out clean. Cold completely. Frost as desired or possibly serve with cinnamon whipped cream (recipe follows).
  2. CINNAMON WHIPPED CREAM: In a small bowl, beat cream till slightly thickened. Blend in sugar, vanilla, and cinnamon; beat till thickened.
