Little Yellow Squash Casserole

Great way to use summer veggies! Would be great with other types of squash too.

Ingredients

  • 2 lbs. fresh yellow squash, sliced
  • 1/4 c. minced onion
  • 1 can cream of chicken soup
  • 1 c. dairy lowfat sour cream
  • 1/2 c. shredded carrots
  • 1/2 (8 ounce.) pkg. Pepperidge Farms stuffing mix
  • 1/2 c. (1 stick) melted butter

Directions

  1. Cook squash, onions and carrots in salted water for 5 - 10 min. Drain.
  2. Combine soup and lowfat sour cream. Pour over squash.
  3. Add in stuffing mix and butter. Place in 1 1/2 qt baking dish.
  4. Bake at 350 degrees for about 45 min.
  5. Serve warm.
  6. Can be made the night before but bake when needed and serve warm. Can be warmed up.
