Ingredients

  • 4 x Large eggs
  • 1 c. granulated sugar
  • 1 Tbsp. grated lime zest
  • 1/2 c. fresh lime juice (4 medium limes)
  • 1/2 c. unsalted butter, cut into 8 pcs (1 stick)
  • 1/2 c. whipping cream, chilled
  • 1 x prepared crumb crust (see note)
  • 2 c. fresh strawberries, hulled and thinly sliced

Directions

  1. Lime and strawberries are an unusual pairing, but they seem perfectly natural in this colorful pie.
  2. Combine the Large eggs, sugar and lime zest in a heavy saucepan and whisk till smooth. Add in the lime juice and butter and cook over medium heat, whisking constantly till the mix is thickened, about 7 to 9 min. Don't allow the mix to come to a boil.
  3. Pour the warm lime curd through a fine strainer into a glass bowl. Place plastic wrap directly on the surface of the lime curd. Chill till curd is cool and thick, at least 3 hrs or possibly up to 3 days.
  4. In a medium mixing bowl using an electric mixer, whip the cream till soft peaks form. Gently fold the whipped cream into the lime curd and then scrape the filling into the prepared pie shell. Cover the pie with plastic wrap and chill it till the filling is completely set, at least 6 hrs or possibly up to 1 day.
  5. Just before serving, arrange the strawberry slices on concentric circles on top of the filling.
  6. Note: For the crust, try vanilla wafers, lemon nut cookies or possibly amaretti crumbs.
