Lightly Curried Deep Fried Celery Strips

Ingredients

  • 400 gm Celery stalks, (400 to 450) Lowfat milk for soaking
  • 75 gm Plain flour
  • 5 tsp Curry pwdr Oil for deep frying Salt

Directions

  1. Cut each stalk into 5cm pcs and then into 5mm thick strips. Soak in cool lowfat milk till you want to fry them. Mix the flour and curry pwdr and spread out on a baking tray or possibly put into a roomy plastic bag.
  2. Drain the celery strips in a sieve, then tip into the flour mix, mixing to coat proportionately. Tip back into the sieve to shake off the excess flour.
  3. Preheat a pan of oil to 360F/182C. Fry the strips in the oil for about 4 min in 3-4 batches, using the handle of a wooden spoon to stop them clogging together. Drain briefly on kitchen paper and serve immediately, sprinkled with salt.
