The month of June is on the doorstep and I’m more than willing to open the door and let it in! June is a favorite month of mine for a few reasons. The weather starts to be consistently warmer, the farmers markets begin to sell their fresh produce and it’s the month when I married my beautiful wife…awwwww!

Locally grown cucumbers haven’t hit the farmers markets just yet but when they do I’ll have this easy Pickled Cucumber recipe ready to go. I was at a cooking event recently where Chef John Placko shared this recipe. It instantly reminded me of when I was a kid. During the summer months my mom would often place sliced cucumbers in a bowl with white vinegar and I loved them!

This recipe isn't much different except some sugar is added for sweetness and the dill compliments the flavor of the cucumber. I didn’t have fresh dill on hand when I made these so I used the dried variety. The fresh stuff would have put these cucumber slices over the top!

Hip Cooking Tip: In case you’re wondering, the vinegar and sugar are heated in the pot to dissolve the sugar in the vinegar. If you just stirred it in without heating it up the sugar would sink to the bottom of the bowl.

Song Pairing: As I mentioned, June is the month I married my wife and we are coming up on ten years. Time does fly! Our first dance wasn’t the typical slow dance. We took dancing lessons and learned how to jive and strutted our stuff to Collin Jame’s song “Let’s Shout”. It got our guests and us fired-up for the party afterwards! Like the cucumbers, this song always puts a smile on my face when I have it playing in my kitchen or anywhere else for that matter!

Recipe Pairing – When I was a kid the perfect match for pickled cucumbers was a good Grilled Cheese Sandwich.

Let's Shout Pickled Cucumbers

Lyrics

In a small saucepan, combine vinegar and sugar. Cook and stir over low heat until sugar dissolves. Stir in dill. Remove from heat and let cool.

In a bowl combine cucumber slices and vinegar mixture. Let sit for 5 minutes before serving.
