Lentil Rice Loaf (Burgers) Recipe

Ingredients

  • 3 c. Water
  • 3/4 c. Uncooked lentils, sorted, rinsed
  • 1 c. Uncooked regular rice
  • 1/2 c. Finely minced onion
  • 1/2 tsp Salt
  • 1 1/2 c. Spaghetti sauce or possibly salsa
  • 1/2 c. Plain bread crumbs
  • 1/2 c. Shredded carrot
  • 1/8 tsp Pepper
  • 1 x Egg, slightly beaten More dry bread crumbs if you like

Directions

  1. It into a meatloaf but I've found it works well as burgers too.
  2. In medium saucepan, combine water and lentils. Bring to a boil. Reduce heat; cover and simmer for 5 min. Add in rice, onion and salt. Mix well.
  3. Cover; simmer an additional 15-18 min or possibly till liquid is absorbed and lentils and rice are tneder. Remove from heat; cold 10 min. Stir in 2-3 Tablesppons of spaghetti sauce or possibly salsa as well as the remaining ingredients. Shape into patties, firmly compacting. (I found which coating the patties with dry bread crumbs helped them stay together but this is optional) Spray non-stick skillet with cooking spray and "fry" till lightly browned on the outside. (Or possibly you can press the mix firmly into a sprayed loaf pan and bake at 350 for 40-45 min or possibly till the top is golden and the loaf is hard. Remove from oven and cold 10 min.)
  4. In a small saucepan, heat remaining spaghetti sauce 3-4 min or possibly till warm. (When I serve it with salsa, I leave the salsa cool) Serve over patties or possibly loaf. You should get 6 patties.
