Lemon Sour Cream Bundt Cake Recipe
Ingredients
- 2 large eggs, room temperature (100 g)
- 1 large egg yolk, room temperature (18 g)
- 3/4 cup + 1 T (200 g) sour cream, divided (I had to supplement with some low fat)
- 2 t vanilla
- 2 1/2 cups (250 g) cake flour
- 1 1/4 cups (250 g) superfine sugar
- 1 1/2 t baking powder
- 1/2 t baking soda
- 1/2 t salt
- 2 T lemon zest
- 14 T (1 3/4 sticks, 200 g) unsalted butter, room temperature (65-75 F)
- Lemon Syrup
- 1/2 cup + 1 T (112 g) sugar
- Freshly squeezed lemon juice from 2-3 lemons (6 T, 3 fluid oz)

.%3C/p%3E%3Cp%3EThis%20sight,%20out%20our%20back%20yard,%20might%20have%20honestly%20been%20more%20exciting%20than%20anything%20else%20this%20past%20week,%20including%20the%20cupcakes.%3C/p%3E%3Cp%3EFor%20the%20first%20little%20celebration,%20with%20my%20in%20laws,%20I%20made%20Vietnamese%20bun%20(she%20requested%20steak,%20and%20it%20was%20a%20great%20way%20to%20serve%20it%20without%20breaking%20the%20bank)%20and%20Dark%20Chocolate%20Cupcakes%20with%20White%20Chocolate%20Peppermint%20Buttercream%20Frosting.%20However,%20her%20birthday%20coincided%20with%20her%20ballet%20recital%20(and%20Sammy%E2%80%99s),%20and%20Alex%20had%20been%20unable%20to%20decide%20between%20chocolate%20and%20lemon,%20so%20I%20made%20this%20lemon%20bundt%20cake%20for%20the%20after-recital%20treat%20the%20next%20day%20(and%20yes%20that%20is%20half%20of%20a%20cake,%20as%20I%20took%20the%20photos%20the%20next%20day,%20after%20serving%20it%20the%20previous%20night).%3C/p%3E%3Cp%3EThis%20lemon%20bundt%20differs%20from%20others%20I%20have%20tried%20in%20that%20you%20poke%20holes%20into%20the%20cake%20and%20brush%20the%20lemon%20sugar%20syrup%20into%20the%20holes%20before%20inverting%20the%20cake%20and%20brushing%20the%20top%20of%20the%20cake%20as%20well.%20I%20made%20a%20crucial%20mistake%20at%20this%20stage%20because%20I%20ignored%20the%20(frankly%20un-emphasized)%20instruction%20to%20cool%20the%20cake%20on%20a%20plate%20and%20cooled%20it%20on%20a%20cooling%20rack%20like%20normal.%20Big%20mistake,%20as%20much%20of%20the%20syrup%20dripped%20back%20out,%20carrying%20bits%20of%20cake%20with%20it.%20It%20was%20a%20delicious%20clean-up,%20I%20confess,%20but%20I%20would%20like%20to%20try%20the%20cake%20with%20the%20syrup%20properly%20retained.%3C/p%3E%3Cp%3EI%20think%20my%20favorite%20lemon%20bundt%20cake%20remains%20the%20Ultra%20Lemon%20Bundt%20Cake%20by%20Lisa%20Yockelson,%20but%20this%20cake%20certainly%20did%20not%20disappoint%20and%20was%20definitely%20simpler%20in%20execution.%20The%20glaze%20came%20together%20quickly%E2%80%93and%20there%20was%20only%20one%E2%80%93and%20the%20only%20lemon%20in%20the%20cake%20came%20from%20zest.%20Just%20make%20sure%20you%20cool%20the%20darn%20thing%20on%20a%20platter!%3C/p%3E%3Cp%3ELemon%20Sour%20Cream%20Bundt%20Cake%3C/p%3E%3Cp%3EClosely%20adapted%20from%20Rose%20Levy%20Beranbaum%E2%80%99s%20Rose%E2%80%99s%20Heavenly%20Cakes%3C/p%3E%3Cp%3ESpray%20a%2010%20cup%20bundt%20pan%20with%20baking%20spray%20with%20flour.%20Set%20aside.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20F%20with%20the%20rack%20set%20in%20the%20lower%20third%20of%20the%20oven.%3C/p%3E%3Cp%3EWhisk%20together%20the%20eggs,%20egg%20yolk,%201/4%20cup%20of%20the%20sour%20cream%20and%20the%20vanilla%20until%20lightly%20combined.%20Do%20not%20over-whisk.%20Set%20aside.%3C/p%3E%3Cp%3EUsing%20a%20stand%20mixer%20fitted%20with%20the%20flat%20beater,%20mix%20the%20flour,%20sugar,%20baking%20soda,%20baking%20powder,%20salt%20and%20lemon%20zest%20until%20thoroughly%20combined%20(about%2030%20seconds%20on%20low%20speed).%20Add%20the%20butter%20and%20remaining%20sour%20cream%20and%20mix%20on%20low%20speed%20until%20the%20dry%20ingredients%20have%20been%20moistened%20and%20will%20not%20fly%20out%20of%20the%20bowl.%20Raise%20the%20speed%20to%20medium%20and%20beat%20for%201%201/2%20minutes.%20Scrape%20down%20the%20sides%20of%20the%20bowl%20as%20needed;%20the%20mixture%20will%20become%20lighter%20and%20fluffier,%20more%20liked%20a%20batter%20and%20less%20like%20a%20cookie%20dough.%3C/p%3E%3Cp%3EStarting%20once%20again%20on%20low%20speed,%20gradually%20add%20the%20egg%20mixture%20in%202%20additions,%20eventually%20beating%20on%20medium%20speed%20for%2030%20seconds%20after%20each%20addition.%20Scrape%20the%20down%20the%20sides%20and%20bottom%20of%20the%20bowl%20once%20again%20and%20beat%20for%20a%20few%20for%20more%20moments.%3C/p%3E%3Cp%3EScrape%20the%20batter%20into%20the%20prepared%20pan,%20smoothing%20the%20top%20evenly.%20Bake%20for%2045-55%20minutes,%20or%20until%20a%20cake%20tester%20inserted%20into%20the%20center%20comes%20out%20mostly%20clean%E2%80%93the%20edges%20of%20the%20cake%20will%20only%20shrink%20away%20from%20the%20sides%20of%20the%20pan%20after%20removing%20the%20cake%20from%20the%20oven.%20Shortly%20before%20the%20cake%20is%20finished%20baking,%20make%20the%20lemon%20syrup.%3C/p%3E%3Cp%3ECombine%20the%20sugar%20and%20lemon%20juice%20in%20a%20small%20nonreactive%20sauce%20pan%20and%20heat%20over%20low%20heat.%20Do%20not%20let%20the%20syrup%20boil,%20but%20instead%20just%20stir%20to%20dissolve%20the%20sugar%20and%20keep%20the%20syrup%20warm.%3C/p%3E%3Cp%3EAs%20soon%20as%20the%20cake%20comes%20out%20of%20the%20oven,%20poke%20it%20all%20over%20with%20a%20thin%20skewer%20(I%20just%20used%20the%20cake%20tester)%20and%20brush%20it%20with%20about%201/3%20of%20the%20syrup.%20Let%20the%20cake%20cool%20in%20the%20pan%20for%2010%20minutes.%3C/p%3E%3Cp%3EInvert%20the%20cake%20onto%20a%20serving%20platter%20or%20cake%20keeper%20(not%20a%20cooling%20rack)%20and%20brush%20the%20cake%20all%20over%20with%20the%20remainder%20of%20the%20syrup.%20Make%20sure%20to%20get%20the%20top,%20sides%20and%20center%20hole%20of%20the%20cake.%20Cool%20completely%20and%20then%20either%20wrap%20the%20cake%20or%20cover%20with%20the%20cake%20keeper%20lid.%20It%20is%20best%20made%201%20day%20in%20advance.%3C/p%3E){kind=link}
