Ingredients

  • 1 c. flour
  • 2 tsp lemon zest
  • 1/2 tsp salt
  • 1/4 tsp freshly-grnd black pepper
  • 1 c. water Canola oil for frying
  • 1 1/2 lb perch fillets (thicker the better)

Directions

  1. Combine the flour, lemon zest, salt, pepper. Now stir in the 1 c. of cool water and chill for at least 30 min.
  2. In a deep skillet or possibly deep fat fryer, heat the oil, (at least 1 1/2 to 3 inches deep) to 375 degrees.
  3. Coat fish fillets with flour, then dip in the chilled batter. Fry only a few pcs at a time, turning occasionally, till they are light golden. Drain on paper towels, keep hot until remaining fish is cooked.
  4. Comments: You can use this recipe for any nice white meat fish. This works well with pan fish also.
