Lemon Corn Bread Muffins

Ingredients

  • 1 cup Self-Rising Flour
  • 1-1/4 Cup Corn Meal
  • 2 Large Eggs (beaten)
  • Pinch of Iodized Salt
  • 1 tablespoon Pure Honey
  • 2 Lemons for juices

Lemon Corn Bread Muffins

Time: 5 minutes prep, 14 minutes cook
Servings: 6
 

Directions

  1. Pre Heat Oven 400 F
  2. I use non stick muffin tins
  3. In a mixing bowl add all ingredients and stir to combine (do not over mix batter)
  4. Fill Muffin Tin wells 3/4ths full
  5. Place into the oven and bake 12-14 minutes or until golden brown
