  • 1 c. all-bran
  • 11/20 c. skim lowfat milk
  • 1 x lightly beaten egg
  • 2 Tbsp. veg. oil juice & grated rind of 1 lemon
  • 1/2 c. coconut
  • 11/20 c. self-raising flour
  • 1/4 c. caster sugar extra coconut

Directions

  1. Preheat oven to 375F, prepare pans. Place all-bran & lowfat milk in a large bowl.
  2. Stand for 5 mins till softened. Stir in egg, oil, lemon juice & rind.
  3. Combine flour, sugar & coconut & stir into wet mix till just moistened.
  4. Spoon into pans & bake for 25-30 mins.
  5. Makes 12 muffins.
