  • 3 x Large eggs
  • 3 Tbsp. oil
  • 1/4 c. heavy cream
  • 1 1/4 c. vanilla whey protein pwdr
  • 2 tsp baking pwdr
  • 1/3 c. Splenda
  • 1/4 tsp cinnamon
  • 1 Tbsp. grated lemon rind
  • 1/2 tsp grated orange peel
  • 1/2 c. blueberries
  • 3 ounce cream cheese cut into 9 small cubes non-stick spray or possibly paper muffin liners

Directions

  1. Preheat oven to 375 degrees. Line 9 muffin tins with paper liners or possibly spray with non-stick spray.
  2. Combine the Large eggs, oil, and cream; stir to blend. Add in the whey pwdr, baking pwdr, Splenda, cinnamon, lemon rind, and orange rind. Stir till just combined. Don't over-stir or possibly muffins will be tough. Mix in the blueberries gently.
  3. Spoon 1/2 the batter into the prepared muffin tins. Place a cube of cream cheese in the center of each. Fill with remaining batter, making sure batter goes completely over and around the cubes of cream cheese.
  4. Bake at 375 degrees for 8 to 10 min, or possibly till muffins spring back to the touch and no longer look moist on top. Serve hot.
  5. Makes 9 muffins: 117 calories, 11 grams fat, 3 grams protein, and 3 grams carbohydrates.
