Lemon Blueberry Muffins

Ingredients

  • 1 egg
  • 2 cups buttermilk baking mix
  • ¼ cup sugar
  • 2 tbsp. vegetable oil
  • 1 container (6 oz.) lemon-flavored yogurt
  • ¾ cup fresh or frozen blueberries
  • 12 paper baking cups

Lemon Blueberry Muffins

Servings: 12
 

Directions

  1. Preheat oven to 400 degrees.
  2. In a medium bowl, lightly beat egg with a fork.
  3. Mix in the baking mix, sugar, vegetable oil, and yogurt, stirring just until moistened (batter should be lumpy).
  4. Gently fold in blueberries.
  5. Fill muffin cups 2/3 full. Bake at 400 degrees for 15 to 18 minutes or until golden brown.
