Lemon Basil Pasta Salad Recipe

Ingredients
- 1 lb penne pasta, cooked and rinsed in cool water juice and grated rind of 1 lemon
- 2 Tbsp. extra virgin olive oil
- 2 Tbsp. rice vinegar
- 1 ounce fresh basil, minced
- 1 ounce fresh cilantro or possibly parsley, minced
- 1/4 c. pine nuts, toasted
- 1/4 c. shredded Parmesan cheese
- 2 x Roma tomatoes, diced
- 3 x cloves garlic, crushed
Directions
- Mix all ingredients and refrigeratewell.
