Toss the vegetables with oil, vinegar, and lemon juice. Spread on a baking sheet (leaving excess liquid behind) and season with salt & pepper. Roast at 400 F for about 40 minutes (depending on the size of the vegetables).Mmmm, I finally found a beet recipe that I like!
