Lemon And Garlic Roast Pork

Ingredients

  • 1 x lean boneless pork loin roast (3-1/4-lb.)
  • 3/4 tsp grated lemon rind
  • 1/2 tsp salt
  • 1/2 tsp grnd cumin
  • 1/4 tsp pepper
  • 3 x garlic cloves chopped
  • 1 c. low-salt chicken broth

Directions

  1. Trim fat from pork. Combine next 5 ingredients in a small bowl; stir well, and rub proportionately over pork.
  2. Insert a meat thermometer into one end of pork. Place pork in an 11 x 7-inch casserole; add in broth to dish.
  3. Bake at 400 degrees for 30 min. Turn pork over, and bake an additional 1.5 hrs or possibly till thermometer registers 170 degrees. Throw away broth.
  4. Yield: 24 servings (serving size: 1-1/2 ounces pork).
  5. NOTES : This was one of the most tender and delicious pork roasts we've ever tested in our kitchens.
