Kids Favorite Pumpkin Chocolate Chip Muffins

Ingredients

  • 1 1/2 cups whole-wheat flour
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 2 tsp ground cinnamon or pumpkin pie spice
  • 1/2 tsp salt
  • 4 large eggs, slightly beaten
  • 2 cups granulated sugar
  • 1 can (15 oz.) pumpkin (Libby's or similar)
  • 1 cup vegetable oil
  • 2 cups (12-oz. pkg.) Semi-Sweet Chocolate Morsels

Kids Favorite Pumpkin Chocolate Chip Muffins

Time: 20 minutes prep, 20 minutes cook
Servings: 36
 

Directions

  1. Preheat oven to 350° F. Grease thirty-six 2 1/2-inch muffin cups or line with paper bake cups.
  2. Combine flour, baking soda, baking powder, cinnamon and salt in a bowl. Combine eggs and sugar in large bowl. Add pumpkin and oil; mix well. Stir in flour mixture until moistened. Stir in chocolate chips. Spoon batter into the muffin cups.
  3. Bake for 20 to 25 minutes or until top feels springy when lightly touched. Cool in pans on wire racks for 5 minutes, then remove. Great served warm or at room temperature.

These muffins are really delicious! They are moist and flavorful. Our kids really love them, and I do too.

    Ok...I generally try to stay away from muffins...and especially chocolate chip ones. But these were some of the best I've tasted. The pumpkin and spices give it a really nice texture and flavor.

        These are gorgeous muffins... ! We love spice with chocolate it brings such a wonderful taste to the palet and smell in the home ...
