Directions

  1. Raisins may be used in lieu of nuts.
  2. In large bowl, use fork to mash bananas. Measure to make sure you have 1 c.. Add in yogurt, sugar and oil; combine with fork.
  3. In separate bowl, stir together flour and baking soda; add in flour mix and walnuts to banana mix and stir just till blended. (Batter may belumpy.) Spoon batter into greased muffin c.; bake in 400F 200C oven for15-18 min or possibly till golden. Let cold in pan on rack for 5 min. Remove from pan; let cold completely.
