Key Lime Cake Recipe
Ingredients

- For the cake:
- 6 T (3/4 stick) unsalted butter, room temperature
- 2 T vegetable oil
- 1 cup sugar
- 2 large eggs
- 1 3/4 cups AP flour, fluffed, scooped, and leveled (Gray measures her flour differently from me and it was her recipe, soâ¦.)
- 2 t baking powder
- 1/2 t salt
- 2/3 cup heavy whipping cream
- the zest of 2 key limes
- 1 T fresh key lime juice
- 1 cup granulated sugar

%20because%20they%20are%20just%20not%20that%20pretty%20on%20their%20own%20and%20I%20am%20too%20lazy%20to%20garnish%20much.%20But%20as%20soon%20as%20I%20saw%20the%20Key%20Lime%20Cake%20in%20Melissa%E2%80%99%20Gray%E2%80%99s%20All%20Cakes%20Considered%20I%20knew%20I%20was%20going%20to%20get%20over%20that%20bias%20and%20make%20it.%3C/p%3E%3Cp%3EAnd%20as%20predicted%20it%20is%20not%20very%20pretty.%20But%20it%20sure%20is%20tasty.%20And%20easy.%20I%20think%20John%20actually%20might%20have%20liked%20it%20better%20than%20my%20lemon%20bundt%20cakes,%20and%20while%20I%20would%20not%20go%20that%20far%20I%20would%20say%20it%20gave%20them%20some%20competition.%20I%20did%20adapt%20the%20cake%20some,%20using%20a%20granulated%20sugar%20based%20glaze%20as%20I%20prefer%20them,%20increasing%20the%20limes,%20and%20subbing%20in%20some%20oil%20as%20I%20am%20experimenting%20with%20using%20a%20little%20oil%20in%20place%20of%20butter%20in%20cases%20(and%20it%20worked%20fine).%3C/p%3E%3Cp%3EI%20have%20to%20give%20a%20shout-out%20to%20Melissa%20Gray%E2%80%99s%20book%20while%20I%20am%20at%20it.%20It%20is%20incredibly%20read-able%20with%20a%20very%20wide%20range%20of%20cakes%20(in%20fact%20it%20is%20ordered%20from%20simple%20to%20difficult,%20the%20idea%20being%20that%20if%20you%20are%20a%20novice%20cake%20baker%20you%20can%20just%20bake%20your%20way%20through%20it).%20Although%20at%20times%20her%20schtick%20is%20laid%20on%20a%20little%20thick,%20for%20the%20most%20part%20I%20found%20the%20book%20quite%20funny%20and%20actually%20read%20it%20straight%20through.%20My%20only%20other%20complaint%20is%20that%20she%20loves%20tube%20pans,%20which%20make%20gargantuan%20cakes.%20But%20I%E2%80%99ll%20get%20over%20it%E2%80%93and%20John%E2%80%99s%20co-workers%20and%20students%20will%20be%20eating%20pretty%20this%20year.%3C/p%3E%3Cp%3EKey%20Lime%20Cake%3C/p%3E%3Cp%3EFor%20the%20glaze:%3C/p%3E%3Cp%3E1/2%20cup%20fresh%20key%20lime%20juice%20(this%20took%20about%20a%20bag%20of%20key%20limes%20and%20a%20lot%20of%20squeezing%E2%80%93not%20sure%20yet%20if%20I%20think%20the%20tiny%20key%20limes%20are%20worth%20it%20over%20Persian%20limes)%3C/p%3E%3Cp%3E1%20cup%20granulated%20sugar%3C/p%3E%3Cp%3Econfectioner%E2%80%99s%20sugar%20for%20dusting%3C/p%3E%3Cp%3EPlace%20a%20rack%20in%20the%20center%20of%20the%20oven%20and%20preheat%20it%20to%20350%20F.%20Line%20the%20bottom%20of%20an%208X8X2%20pan%20with%20parchment%20paper%20and%20grease%20all%20over.%20Set%20aside.%3C/p%3E%3Cp%3EWhisk%20together%20the%20flour,%20salt%20and%20baking%20powder.%20Set%20aside.%3C/p%3E%3Cp%3ECream%20the%20butter%20with%20a%20mixer%20on%20medium%20speed.%20Gradually%20add%20half%20of%20the%20sugar%20and%20then%20add%20the%20oil.%20When%20that%20is%20well%20combined,%20gradually%20add%20the%20rest%20of%20the%20sugar%20and%20beat%20until%20light%20and%20fluffy.%3C/p%3E%3Cp%3EAdd%20the%20eggs,%20one%20at%20a%20time,%20beating%20after%20each%20addition.%20Scrape%20down%20the%20sides%20of%20the%20bowl%20as%20needed.%20Add%201/3%20of%20the%20flour%20mixture%20to%20the%20mix,%20turning%20the%20mixer%20speed%20down%20to%20low.%20Add%20half%20of%20the%20heavy%20cream,%20then%20flour%20again,%20then%20the%20remaining%20cream,%20and%20then%20finish%20with%20the%20remaining%20flour.%20Add%20the%20key%20lime%20zest%20and%20juice%20to%20the%20batter%20and%20beat%20for%202%20minutes%20on%20medium%20low%20speed.%3C/p%3E%3Cp%3EScrape%20the%20batter%20into%20the%20prepared%20pan%20and%20smooth%20the%20top.%20Bake%20for%2040%20minutes%E2%80%93starting%20at%20the%2020%20minute%20mark,%20check%20your%20cake%20for%20browning.%20When%20it%20is%20browning,%20cover%20the%20pan%20loosely%20with%20foil%20(for%20Gray%20this%20was%20at%20the%2020%20minute%20mark%20but%20for%20me%20it%20was%20at%20the%2030%20minute%20mark).%20The%20cake%20is%20done%20when%20a%20toothpick%20inserted%20into%20the%20middle%20comes%20out%20clean.%3C/p%3E%3Cp%3EWhile%20the%20cake%20is%20baking,%20combine%20the%201/2%20cup%20key%20lime%20juice%20and%20the%201%20cup%20sugar%20in%20a%20small%20saucepan.%20Bring%20it%20to%20a%20boil%20and%20then%20simmer,%20stirring,%20to%20dissolve%20the%20sugar.%20When%20done,%20set%20it%20aside,%20but%20when%20the%20cake%20comes%20out%20of%20the%20oven,%20heat%20the%20syrup%20back%20up.%3C/p%3E%3Cp%3ELet%20the%20cake%20cool%20in%20its%20pan%20for%2010%20minutes%20and%20then%20remove%20it%20from%20the%20pan,%20removing%20the%20parchment%20paper%20from%20the%20bottom%20and%20flipping%20it%20back%20over%20to%20cool%20right%20side%20up.%20Place%20it%20on%20a%20cooling%20rack%20that%20has%20foil%20underneath%20it.%20Poke%20many%20small%20holes%20in%20the%20top%20of%20the%20cake%20with%20a%20skewer%20or%20toothpick.%20Brush%20the%20glaze%20over%20the%20cake%E2%80%93it%20will%20absorb%20and%20then%20you%20will%20brush%20again%20and%20again,%20until%20the%20syrup%20is%20used%20up.%20If%20you%20want%20you%20can%20also%20use%20the%20syrup%20that%20drips%20down%20to%20the%20foil%20but%20I%20did%20not%20bother.%20Let%20the%20cake%20cool%20and%20sprinkle%20with%20confectioner%E2%80%99s%20sugar%20before%20serving.%3C/p%3E){kind=link}
