Key Lime Bar Cookies/Dessert Show Recipe

Ingredients
- 2 c. All-purpose flour
- 1/2 c. Powdered sugar
- 3/4 c. Butter softened
- 4 x Large eggs lightly beaten
- 1 1/2 c. Sugar
- 1/4 c. All-purpose flour
- 1 tsp Baking pwdr
- 1/4 c. Key lime juice * Icing
- 1 c. Powdered sugar
- 3 Tbsp. Lime juice bottled or possibly fresh
Directions
- * (Nellie & Joe's in the Bottle, available in most supermarkets, or possibly use the juice of regular limes from the supermarket).
- Preheat oven to 350 degrees. Crust: combine in a large bowl the flour, powdered sugar and softened butter. Mix using electric mixer till crumbly.
- Press mix in bottom of ungreased 9 by 13 inch pan. Bake 20-30 min or possibly till light golden.
- Filling: mix together Large eggs, sugar, flour and baking pwdr. Blend well.
- Stir in lime juice and blend well. Pour mix over hot crust. Return to oven and bake another 25-30 min or possibly till top is light golden.
- Cold completely.
- Icing: mix together powdered sugar and lime juice. Mix should be spreading consistency (add in more juice if necessary.) Spread icing over top and cut into bars.
