Kathy's Sweet 'N' Sour Chicken Recipe

Ingredients

  • 6 med carrots cut into 1/2" chunks
  • 1/2 c. finely-minced green pepper
  • 1 sm onion finely minced
  • 3 x split chicken breasts - (6 halves) (removing skin is optional)
  • 1/2 tsp salt
  • 1 jar Sweet 'N' Sour sauce - (10 ounce)
  • 1 can pineapple chunks - (15 ounce) liquid removed
  • 2 Tbsp. cornstarch

Directions

  1. Place all ingredients in crockpot with chicken on top. Cover and cook on LOW for 6 to 8 hrs.
  2. Remove chicken and thicken sauce with 2 Tbsp. cornstarch dissolved to a medium thick paste with water.
  3. Pour over chicken breasts - or possibly remove chicken from bone and combine with sauce mix. Serve with steamed white or possibly brown rice.
  4. This recipe yields 6 servings.
