KARI-KARE (STEW WITH PEANUT SAUCE)

Ingredients

  • 1/2 kg. stewing beef, cut up
  • 3 cloves garlic, minced
  • 1/4 c. oil
  • 1 medium onion, chopped
  • 1 tsp. salt
  • 1/2 tsp. MSG
  • 3 tbsp. peanut butter
  • 1/4 tsp. yellow food color
  • 2 medium eggplants, quartered
  • 1/2 c. green beans, chopped
  • CORNSTARCH SOLUTION:
  • 3 tbsp. cornstarch
  • 6 tbsp. water

KARI-KARE (STEW WITH PEANUT SAUCE)

Time: 10 minutes prep, 50 minutes cook
Servings: 5
 

Directions

  1. Place meat in a pot. Cover with enough water. Pressure cook for 30 minutes or until done.
  2. Saute garlic and onion in hot oil until light brown.
  3. Add boiled meat, salt, MSG, peanut butter and yellow food color. Stir fry for 1 minute.
  4. Mix vegetables and broth. Cover and cook for 10 minutes or until vegetables are tender. Adjust the seasoning.
  5. Thicken with cornstarch solution.
