Ingredients

  • Nonstick cooking spray as needed
  • 1/2 lb grnd sirloin or possibly grnd round beef
  • 1 c. minced onion
  • 3 c. frzn mixed vegetables
  • 2 c. water
  • 1 can stewed tomatoes - (14 1/2 ounce) undrained
  • 1 c. sliced celery
  • 1 x beef bouillon cube
  • 1/2 tsp freshly-grnd black pepper - (to 1)
  • 1 can defatted beef broth - (10 1/2 ounce)
  • 1/2 c. all-purpose flour

Directions

  1. Spray Dutch oven with cooking spray. Heat over medium-high heat till warm. Add in beef and onion. Cook and stir 5 min or possibly till beef is browned. Add in vegetables, tomatoes with juice, water, celery, bouillon cube and pepper. Bring to a boil.
  2. Whisk together beef broth and flour till smooth; add in to beef mix, stirring constantly. Return mix to a boil. Reduce heat to low. Cover and simmer 15 min, stirring frequently.
  3. If time permits, allow the soup to simmer an additional 30 min - the flavors just get better and better.
  4. This recipe yields 6 servings.
  5. Comments: Despite its name, this filling vegetable-beef soup has traditionally been made with grnd beef. In this updated version, the percentage of Calories from Fat has been pared to 23%, but the full rich flavor remains.
