Jim's Turkey Cutlets With Madeira Sauce

Ingredients

  • 1/2 c. flour
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/2 c. Madeira wine
  • 4 x turkey cutlets, (1 pound in all)
  • 2 Tbsp. oil
  • 2 Tbsp. butter
  • 1/2 c. chicken stock, or possibly canned broth

Directions

  1. Combine flour, salt, and pepper. Lb. cutlets flat; dredge in flour mix. Heat oil and 1 Tablespoons butter in a large frying pan over medium-high heat. When warm, add in turkey: cook till golden brown (about 2 min per side).
  2. Remove from pan and cover to keep hot. Add in Madeira and stock; bring to boil (stirring to scrape up any browned bits) and continue to boil till mix is reduced to 1/2 c. (3-4 min). Add in salt and pepper, if needed. Cut remaining 1 Tbsp. butter into small pcs. Remove pan from heat, add in butter, and stir till sauce is smooth. Pour over turkey and serve immediately.
