Jerk Pork Chops

Cayman style jerk pork chops

Ingredients

  • 4 pork chops
  • 4 green onions, finely chopped
  • 1/2 cup orange juice
  • 1/4 cup soy sauce
  • 3/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • Juice from 1 lime
  • 1 scotch bonnet pepper, seeded and finely chopped
  • 1 clove of garlic, minced
  • 1 tbsp dried thyme
  • 3/4 tsp ground cinnamon
  • 3/4 tsp ground nutmeg
  • 1 1/2 tsp cayenne pepper
  • 1 1/2 tsp ground sage
  • 2 tbsp salt
  • 1 1/2 tsp black pepper
  • 1/2 tsp of red pepper flakes

Directions

  1. In a large bowl, combine the red pepper flakes, thyme, cayenne pepper, black pepper, sage, nutmeg, cinnamon, salt, garlic and sugar
  2. With a wire whisk, mix in the olive oil, soy sauce, vinegar, orange juice and lime juice
  3. Add the scotch bonnet pepper and onions
  4. Stir well and add the pork chops
  5. Cover and marinate for at least one hour, longer if possible
  6. Preheat an outdoor grill
  7. Remove the pork chops from the marinade and grill for 8 to 10 minutes on each side or until fully cooked
  8. While grilling, baste frequently with the marinade
