Ingredients
- 6 x fresh plums or possibly Italian prune plums, pitted, thinly sliced
- 1 x carrot, cut into 1/4 inch julienne
- 1/2 x onion, thinly sliced
- 1 x 1 inch piece fresh ginger, finely minced, or possibly
- 1/2 tsp grnd ginger
- 1 1/2 tsp salt
- 1 Tbsp. granulated sugar
- 1/3 c. rice vinegar or possibly white wine vinegar
- 1/3 c. water

Directions
- Toss plums, carrot, onion and ginger together till well-mixed.
- In separate bowl, mix salt, sugar, rice vinegar and water. Stir till translucent/soft. Pour over plum mix.
- Place mix in covered container and chill for 4 hrs or possibly overnight.
- Drain and serve as a condiment to grilled chicken, pork or possibly beef, or possibly as a starter salad.
