Japanese Fried Rice

Ingredients

  • 1 cup frozen green peas (thawed)
  • 3 cups cooked Japanese rice
  • 1 small carrot, finely chopped
  • 2 garlic cloves, finely chopped
  • 1/4 lb boneless chicken breast, cut into small cubes
  • 2 tbsp neutral oil (canola, grapeseed)
  • 1 tbsp tonkatsu sauce (vegetable and fruit sauce. I use Bull-Dog)
  • 2 tbsp soy sauce
  • 1/4 tsp freshly ground black pepper
  • 1/4 tsp kosher salt
  • 2 eggs

Japanese Fried Rice

Time: 15 minutes prep, 10 minutes cook
Servings: 2
 

Directions

  1. In a pan over medium heat, add oil, garlic and cook for a minute. Add chopped carrots and cook for 2 minutes. Add chicken and cook for 2-3 minutes, until the chicken is cooked through.
  2. Add rice and peas and mix well. Add soy sauce, tonkatsu sauce, black pepper and salt, and mix well. Push the rice to one side and break the eggs on the clear side. Slowly scramble the eggs and incorporate with the rice. Source: http://pickledplum.com/

    I was surprisingly happy with the way this turned out. I haven’t had good fried rice since I left Okinawa. This still wasn’t as good as the fried rice you can get over there, but it was better than anything you can get in a restaurant down here in VA.
    I had to make my own Tonkatsu sauce, since the grocery store didn’t have it. I was a little worried about this, but it turned out really good.
    The recipe only called for one tblspn, I used two and I think I could have used more. I really like the flavor, and I don’t think more would have hurt it at all. (Good thing I have 3 cups of it in the fridge now!)
    I think I could have put more scrambled egg in as well. And I actually need to perfect the way I added the egg….didn’t turn out quite right, but didn’t affect the end result.
    Overall, great recipe for fried rice!
