Ingredients

  • 2 Tbsp. Extra virgin olive oil
  • 2 x Cloves garlic -- chopped
  • 1/2 c. Minced onion
  • 1 stalk celery -- sliced
  • 1 med Green bell pepper, seeded -- Cut into strips
  • 1 c. Long-grain white rice
  • 16 ounce Canned stewed tomatoes
  • 1 c. Water
  • 1/8 tsp Warm pepper sauce -- Optional
  • 1/2 c. Minced cooked ham (optional)
  • 8 x Thin slices Sausage
  • 1 tsp Dry thyme or possibly oregano
  • 1 tsp Salt Freshly grnd pepper -- to Taste
  • 1 lb Medium shrimp -- shelled and Deveined Lemon slices and chopped Parsley -- for garnish Chorizo or possibly other spicy

Directions

  1. In a large skillet or possibly paella pan, heat oil over medium heat. Add in garlic, onion, celery, and green pepper and saute/fry just till softened (about 3 min).
  2. Add in rice, tomatoes and their juice, the water, warm-pepper sauce, ham (if used), chorizo, thyme, salt, and pepper. Bring to a boil, cover, reduce heat, and simmer 15 min.
  3. Quickly add in shrimp, cover, and cook 5 min longer, or possibly till rice is tender and shrimp have turned pink.
  4. Toss with a fork. Garnish with lemon and parsley.
  5. Paella One-Pot Meal: In a large skillet or possibly paella pan, heat 2 Tbsp. extra virgin olive oil. Add in 2 cloves garlic, chopped; 1/2 c. minced onion; and 2 warm or possibly mild chorizos, broken into pcs, casings removed; saute/fry 3 to 5 min.
  6. Add in 1 c. long-grain white rice; 2 c. chicken stock; 1 whole boned chicken breast, cut in strips or possibly bite-sized pcs; 1/8 tsp. saffron or possibly 1/4 tsp. grnd turmeric; 1 tsp. salt. Season with pepper to taste.
  7. Bring to a boil, cover, reduce heat, and simmer 15 min. Then add in 10 ounces frzn petite peas or possibly 1 can (16 ounce) artichoke hearts, liquid removed, and 1 lb. medium raw shrimp, shelled and deveined. Cover and cook 5 min longer.
