Ingredients

  • 1/2 lb Chicken
  • 1 med Sized onion
  • 1/4 x -(up to)
  • 1/2 lb Grated cheddar Jalapeno peppers
  • 2 tsp Chili pwdr
  • 16 x 4" tortillas (flour or possibly corn, whatever your taste) Vegetable oil for frying Salsa and lowfat sour cream for condiments

Directions

  1. The amounts specified are rough estimates. PLEASE flavor to your own taste, and be sure to let me know if you come up with a good alternative.
  2. Chop chicken into approximately 1/4 inch pcs. Dice onion and peppers to taste. Brown chicken, adding onions and peppers after chicken has turned slightly brown. Add in chili pwdr and mix well. After chicken is completely browned and onions are translucent/soft, remove from heat.
  3. Prepare pan for frying by coating the bottom with a thin layer of oil. Make tortillas "sandwiches" by placing chicken mix in between two tortillas with a moderate amount of cheese both underneath and on top of the mix.
  4. Fry the "sandwiches" over medium heat till tortillas are brown and cheese is melted. Serve with salsa and lowfat sour cream.
