Jaded Peanut Butter Chocolate Cake

This doesn't use butter or sugar - except in the form of peanut butter, chocolate and yogurt! Oh well, at least it is egg-free :-)

This recipe was made in a 12 x 8.5" tin and cuts into 21 squares.

Ingredients

  • 3 small over ripe bananas, mashed
  • 100g chocolate chips
  • 4 tbsp peanut butter
  • 5 tbsp Greek yogurt
  • 100g honey
  • 75ml olive oil
  • 125g plain flour
  • 1 tsp baking powder
  • Half tsp bicarbonate of soda

Directions

  1. Whisk the mashed banana with the peanut butter, yogurt, honey and oil until smooth.
  2. In a large bowl, sift in the flour, baking powder and soda.
  3. Gradually fold in the banana mixture into the dry mixture until almost mixed. Add in the chocolate chips, gently folding until no more flour is seen.
  4. Transfer to a lined tray and bake at 180 degrees C for 20-25 minutes until brown.
