Ingredients

  • 1/4 cup capers, drained and coarsely chopped
  • 1/2 cup chopped fresh flat-leaf parsley
  • 1/2 cup chopped fresh mint leaves
  • 3 tablespoons chopped scallions
  • 1 clove garlic, finely minced (use more, if desired)
  • 3 tablespoons fresh lemon juice or red wine vinegar
  • 2 teaspoons grated lemon peel
  • 1 hard-cooked egg, finely chopped
  • 1 cup extra-virgen olive oil
  • 1 teaspoon dried crushed red pepper flakes
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper

Directions

  1. Whisk all ingredients in a bowl to blend or purée in a blender. Check and adjust seasoning to taste.
