Italian Pepper Chicken Breasts

Ingredients

  • 1/4 c. Lemon juice
  • 1 Tbsp. Extra virgin olive oil
  • 1 tsp Mint, or possibly 2 teaspoon fresh, minced
  • 1 x Clove garlic, chopped
  • 1/2 tsp Salt, or possibly to taste
  • 2 tsp Black peppercorns, crushed
  • 1 1/2 lb Boneless skinless chicken breast halves

Italian Pepper Chicken Breasts

Directions

  1. Prep: 5 minutes, Cook: 10 minutes.
  2. Prepare grill or possibly broiler. Combine first 5 ingredients in a bowl. Mix thoroughly and set aside. Press peppercorns into both sides of chicken breasts. Arrange chicken on a broiler rack and grill or possibly broil 4-5 min per side or possibly till chicken is cooked throughout. Remove from heat. Brush both sides of chicken breasts with mint sauce.
