I have been eating a lot of chicken lately and I wanted something different. I had a package of ground beef in my freezer so I took it out and decided to make chili as we haven't had that in a very long time. It was really good and perfect for a November night.

Directions
Spray a large non stick Dutch oven with the cooking spray and the tsp of olive oil. Over a low-medium flame, when the pot is hot, add the ground beef and break up the large pieces with a wooden spoon. Brown meat for about 3 minutes, stirring occasionally. Stir in all the seasonings and cook for about 2 minutes. Add the onions, garlic and peppers. Stir and cook for another couple of minutes. Add the beans, tomatoes and tomato sauce. Stir to combine. Cover and simmer for about 2 hours. Stirring occasionally. Taste and re-season. Add the grated cheese and serve into large bowls.
