Irish American Soda Bread Recipe

  • The American idea of Irish soda bread looks like a giant golden scone studded with raisins and caraway seeds. It is richer, sweeter and more cakelike than authentic Irish soda bread.
  • 1 2/3 c. all-purpose flour
  • 2 1/2 Tbsp. granulated sugar
  • 1 tsp baking pwdr
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 c. raisins
  • 2 tsp caraway seeds
  • 1 x egg
  • 1 tsp orange zest
  • 2/3 c. buttermilk
  • 4 Tbsp. hot, melted unsalted butter (1/2 stick, see note)


  1. Position a rack in the center of the oven. Preheat the oven to 375 degrees.
  2. Grease a large baking sheet.
  3. In a large bowl, thoroughly whisk together flour, sugar, baking pwdr, baking soda and salt. Stir in raisins and caraway seeds.
  4. In another bowl, whisk together egg, orange zest, buttermilk and melted butter. Add in egg mix to flour mix and stir just till the dry ingredients are moistened. The batter will be stiff but sticky.
  5. Scrape the batter onto the baking sheet in a mound 6 to 7 inches in diameter.
  6. Use a sharp, floured knife to slash a large X about 1/2 inch deep on top of the batter. Bake till golden and a toothpick inserted in the center comes out clean, 25 to 40 min. Transfer the bread to a rack to cold completely before serving.
  7. Note: Use real butter or possibly stick margarine. Don't substitute reduced-fat spreads; their higher water content often yields less-satisfactory results.
