Half & Half Whole Wheat Bread (Machine or Hand-made)

Half & Half Whole Wheat Bread (Machine or Hand-made) by Salad Foodie

Well it's NEARLY half and half (whole wheat flour and white bread flour.) This makes a 2-pound loaf of bread though you can bake it in two 1-pound loaf pans and freeze one..or smaller pans as you wish. At high altitudes, decrease yeast a little (1/2 teaspoon) and increase water (1 to 2 tablespoons.)

Cornbread Waffles

Cornbread Waffles by Salad Foodie

Necessity is the mother of invention. In this instance I am going into the second month of home remodeling life without a kitchen. We either eat cereal, eat out or use small kitchen appliances to cook or heat up food. When given a container of homemade chili recently, I decided to try cooking my favorite cornbread recipe in the…

Favorite Oatmeal Muffins

Favorite Oatmeal Muffins by Salad Foodie

No, not just my favorite oatmeal muffin, these are actually my Number 1 Favorite Muffin ~ period! I love that they are comparatively low-fat and won’t make your fingers greasy as you eat them. I love the chewy texture of oatmeal, the sweetness of raisins and cinnamon, and the spongy texture buttermilk imparts to baked products. I…

Blue Cornmeal Cornbread

Blue Cornmeal Cornbread by Salad Foodie

Blue cornmeal imparts a blue-violet cast to the bread, a coarser consistency and a sweeter, nuttier taste than yellow or white cornmeal. It is 20% higher in protein and has a lower glycemic index, good news for those with elevated blood sugar. However it can be difficult to find! Arrowhead and Bob's Red Mill make it and some health…

Favorite Buttermilk Waffles (with Whole Grain option)

Favorite Buttermilk Waffles (with Whole Grain option) by Salad Foodie

Buttermilk makes baked products divine, and this is the way I use it in waffles. White whole wheat flour or whole wheat pastry flour can be subbed to boost nutrition. Lazy soul that I am, I mix the batter in a blender and use that as a pitcher to pour them conveniently. I freeze extra waffles for a quick into-the-toaster breakfast.…

Best Crispy Waffles

Best Crispy Waffles by Salad Foodie

This is my favorite recipe for a crisp waffle. If that’s the way you like them, don’t reduce the oil, cause that’s what makes them crispy! Lazy soul that I am, I mix the batter in a blender and use that as a pitcher to pour them conveniently. I freeze extra waffles for a quick into-the-toaster breakfast. Just add maple syrup, butter…
