St. Patrick's Day Beef Stew with Guinness

St. Patrick's Day Beef Stew with Guinness by John Spottiswood

This is a great Beef Stew adapted from a recipe by Margaret Johnson. We doubled the recipe, used about half the butter, and added plenty of salt and black pepper. We also cooked it about 5 hours ahead of time and let it sit in the pot for another 3 hours after it was done cooking. It was awesome.

Barbacoa De Cabeza

Barbacoa De Cabeza by Sergio Hernandez

Barbacoa de Cabeza is a slow cooked dish prepared with parts from the head of a cow, such as the cheeks. Popular in South Texas, I've adapted the dish to be cooked using your Slow Cooker, Pressure Cooker, or Smoker/Oven Combo to create this tasty dish.

A hearty oxtail dish with star anise, Chinese mushroom, daikon and carrots. The oxtails turn tender when cooked slow and the bones add a lot of favor to the meat.

Hungarian Gulyas Soup

Hungarian Gulyas Soup by Gyula Sziraczky

This is my really first recipe I've ever "published"...anywhere. So I thought that a traditional, very traditional, Hungarian dish would be appropriate (since I was born in Hungary). The best way to make this soup is to cook it outside in a "bogracs" (a small, round metal pot with handles) over real fire! Try it and you will never…

Braised Beef Short Ribs

Braised Beef Short Ribs by John Spottiswood

We have a couple of recipes for short ribs, and this is probably the most traditional. It has a rich beef flavor and the meat falls off the bones. If the choice is available, we normally use English style short ribs instead of Korean short ribs (also called flanken-style) because the English shortribs are usually cheaper and it…

Austrian Goulash

Austrian Goulash by Foodiewife

This recipe was taught to me by my Bavarian Mutti. I have, since, tried to measure and journal how to make this wonderful stew. This stew is made with beef chuck, a combination of hot and mild paprika (I use quality imported paprika) with a touch of caraway seeds. Served over spaetzle, buttered noodles or with tradition Semmel…

German Rouladen (beef rolls )

German Rouladen (beef rolls ) by Chef Paul McGovern

I love German food !! This is time consuming to make and you will be in the kitchen for quite a while. So it is a great rainy day dish. Prep time for me is about 1 1/2 to 2hr and I am a Chef. The first time I did this about 20 years ago it took me 6 hr. to get it all done. That is cooking time also and it was at home. Spend the time…

Beef with Barley and Wild Rice by John Spottiswood

I went to Russia a few months ago and had a delicious lunch of Beef over barley and wild rice. It was substantial and healthy, so I promised myself that I would try to copy it. This is what I came up with. If you try it, I don't think you will be disappointed. It's delicious!

Traditional Beef Stew

Traditional Beef Stew by Chef Chuck

Traditional Beef Stew has been around for many years. Less desirable pieces of meat like the butt, pieces from the leg, and shoulder are most commonly used when making stews. These fibrous cuts of meat require longer cooking times with a variable amount of liquid- a cooking technique called braising. Braising uses moist and dry heat.…
