Impossible pie is an old fashioned recipe that may even come from the Amish.  I got this recipe from an old Mennonite cookbook that has been in my family for at least 40 years.  I do use less sugar and butter in my recipe than the original.  This Impossible Pie does not need a crust as it makes it own.  This is a creamy coconut pie kind of like a custard.  We like it because it is different from most pies and so quick and easy to make.  Serve it with coffee as a dessert or you could add ice cream or whipped cream.  We like this pie just plain and often have it for breakfast as a sweet morning…
