this is a great way to use also " fish' ( you can use almost any fish you like ) on your salad, with avocados red onions, and why not, make your own bagels... my son love it
filled with dill goat cheese, or just like it is, red onions, lemon olive oil dressing

Ingredients

  • 2 cups of kosher salt
  • 1 cup of sugar
  • 1/2 cup of peppercorn ( mixed, red, green, black )
  • 1/2 cup of fresh herbs- thyme, rosmary, greek fennel
  • 8 to 10 oz of salmon fillet

Directions

  1. Blend salt, pepper and herbs, with a cuisinart 1 or 2 minutes
  2. skin off the salmon, and any bones if any
  3. cover the fish with the mix of salt and herbs for 4 to 6 hours
  4. wash the salt off
  5. dried the fish, and store in the fridge or slice thin like carpaccio filled with dill goat cheese, or just like it is, red onions, lemon olive oil dressing
