Hot Fudge Sauce Over Vanilla Ice Cream

Ingredients

  • 2 ounce unsweetened chocolate minced finely
  • 2 Tbsp. unsalted butter
  • 2 Tbsp. light corn syrup
  • 3/4 c. heavy cream
  • 1 c. sugar
  • 2 tsp vanilla
  • 1/8 tsp salt
  • 1 pt premium quality vanilla ice cream Walnuts toasted, minced

Directions

  1. In a heavy saucepan heat the chocolate with the butter and the corn syrup over moderately-low heat. Stirring, add in the cream and the sugar, and cook the mix, stirring, till the sugar is dissolved. Bring the mix to a boil over moderate heat and boil it, without stirring, for 8 min. Remove the pan from the heat and stir in the vanilla and the salt.
  2. Scoop ice cream into four serving dishes and pour warm fudge sauce over vanilla ice cream. The sauce keeps, covered and chilled, for 1 month. Let the sauce cold completely before covering it; any condensation will make it grainy. Reheat the sauce, uncovered, in a double boiler. (Makes 1 1/3 c. sauce)
