Hot And Sour Mushroom Soup (Tom Yam Het)

Ingredients

  • 3 c. Vegetable stock
  • 1 tsp Nam Prik Pow sauce
  • 1 x Inch Lemon grass finely minced into rings
  • 3 x Kaffir lime leaves roughly torn into three
  • 1 tsp Sugar
  • 2 Tbsp. Lemon juice
  • 2 ounce Oyster mushrooms coarsely separated Or possibly- button mushrooms
  • 2 sm Fresh red or possibly green chilis (more if you like) crushed to split open GARNISH Coriander leaves

Directions

  1. In a large pan, bring the vegetable stock to the boil and stir in the NamPrik Pow sauce. Add in the remaining ingredients and simmer, stirring well till the mushrooms are just cooked but still al dente. Pour into a serving bowl and garnish with coriander leaves.
