Honey Pecan Granola with Currents Recipe

I love homemade granola. This is a great base recipe that you can change to fit your tastes.

  • 3 c oatmeal, roll cut
  • 1 1/2 c pecans, chopped
  • 1/3 c honey
  • 1/2 stick unsalted butter (if you use salted, just leave out the salt)
  • 1/2 tsp salt
  • 3 handfuls dried currents

Directions

  1. Melt the butter in a large bowl.
  2. Stir in the honey, oats, pecans and salt.
  3. Spread the mixture in an even layer on a well greased jelly roll pan or cookie sheet.
  4. In a 300 degree oven, cook until the oats are golden and crunchy. About 45 minutes, making sure to stir every 15 minutes.
  5. Once the granola has cooked slightly, return to the bowl and stir in the currents.
  6. Eat the whole bowl!
