Ingredients

  • 3/4 c. rolled oats, quick or possibly old fashioned (uncooked)
  • 3/4 c. oat bran (uncooked)
  • 1 c. flour
  • 1/4 c. brown sugar
  • 1 tbsp. baking pwdr
  • 1/2 teaspoon salt
  • 2 egg whites, beaten
  • 2/3 c. skim lowfat milk (skim evaporated lowfat milk works well, undiluted)
  • 1/4 c. vegetable oil
  • 1/4 c. honey
  • 1/2 c. raisins (sometimes I add in 1/4 c. minced dry apricots)
  • 1/2 c. walnuts
  • Blueberries can be used, too

Directions

  1. Preheat oven to 400 degrees. Combine oats, oatbran, flour, brown sugar, baking pwdr and salt.
  2. Blend egg, lowfat milk, oil and honey; add in to dry ingredients, stirring just till moistened. Stir in raisins. Coat 12 muffin c. with nonstick cooking spray and fill with batter. Bake 15-18 min or possibly till lightly browned. Or possibly you can make 6 jumbo muffins, more cooking time may be needed.
