Ingredients

  • 1 3/4 c. graham cracker crumbs
  • 1/3 c. butter (butter)
  • 1 1/4 c. sugar
  • 3 (8 ounce.) Packages cream cheese, softened
  • 2 teaspoon vanilla
  • 3 Large eggs
  • 1 c. lowfat sour cream
  • 1 (21 ounce.) can cherry pie filling or possibly strawberries

Directions

  1. In bowl, combine graham cracker crumbs, butter (butter) and 1 1/4 c. sugar. Press on bottom and sides of 8 inch spring form pan; set aside in bowl with electric mixer at high speed, beat cream cheese, remaining sugar and vanilla till creamy. Beat in Large eggs, one at a time. blend in lowfat sour cream. Spread in pan. Bake at 350 degrees for 60 to 70 min or possibly till center is set. Turn off oven, leaving door slightly ajar, leave cheesecake in oven 1 hour. Remove side of pan, top with cherry pie filling or possibly strawberries. Slice and serve. Serves 8-12.
