Something changed after I had my boys, I started paying a LOT more attention to ingredient lists and thinking about my families overall health and wellness. While yes, there are a lot of great options out there now thanks to a greater demand for organic and healthier foods. The problem, there is still a ton of garbage out there packed with odd ingredients that no one can actually pronounce. No thank you! I like being able to control what goes into my kids {me and the hubbys too} bellies. Thats what I LOVE about these simple Homemade Chicken Nuggets with Honey Mustard Dipping Sauce. These are so easy to make, go ahead and make a couple batches and freeze in small portions for a quick meal any night of the week.

The chicken nuggets are made from organic ground chicken seasoned with salt, pepper and garlic powder. The coating is simply Italian seasoned breadcrumbs with a little bit of grated pecorino {well, because I need a little Italian in almost everything}. Baked in the oven until golden. The Honey Mustard Dipping Sauce, well thats all thats in there, equal parts of each and done.

Another great use for these if for a Football snack! After they are done baking, toss in a simple buffalo sauce and serve along with celery, carrots and bleu cheese dressing.

Homemade Chicken Nuggets & Honey Mustard Dipping Sauce

Preheat your oven to 385 degrees.

In a bowl mix together the ground chicken, garlic powder, salt and pepper.

Mix together the breadcrumbs and cheese in a small bowl.

Prepare a baking sheet, lined with parchment. Spray the parchment heavily with the olive oil spray.

Using a small cookie scoop, go ahead and scoop out the chicken into the breadcrumbs. Coat and press gently to form the nugget.

Place the nuggets onto the baking sheet. Spray the tops of the nuggets generously with olive oil as well. The oil will help these nuggets get that lovely golden color.

Pop in the oven for approx 15 minutes, flipping the nuggets over about halfway through the cooking time. I recommend keeping the baking sheet in the lower half of the oven.

For the dipping sauce just go ahead and stir together the honey and the mustard. You can of course adjust the amounts to your taste. If you prefer it sweeter, add a little extra honey or vice versa.
